Cottage Cheese Loaf

I think I picked up this recipe back 37 years ago through Le Leche League but now that I look at the recipe again, hand written in an old book, I wonder how anyone thought that they'd feed a family on the amounts listed. Such a quick & easy loaf- keeps well & is delicious.
Lots of flexibility so always just use what you have & what you love.
In to a large bowl put 2 cups of quick cook rolled oats
Add 1 cup of milk
3 eggs
A tsp of good sea salt & some ground black pepper.
A tbsp of olive oil
Mix together well & leave to sit for 20 minutes while you get together the herbs & veges.
Cook a chopped red onion or a couple of leeks in a fry pan with a little olive oil. Add garlic if you like.
Add to the mix in the bowl with a cup of chopped fresh herbs & greens like spinach, chickweed, parsley etc.
Other additions that work well are: chopped sun-dried tomatoes, olives, capers etc
Stir in a 500gram pot of cottage cheese.
Pour in to a greased loaf tin & bake for 30-40 minutes in a moderate oven- until golden brown & firm.




Not the best photos of the loaf itself- but when you're making it for actual dinner the light's not always great & you just want to get on with eating it!
